Instructions

  1. Cook macaroni al dente, as instructed on package and transfer to large mixing bowl, set aside.
  2. Pre-heat oven to 350°. Melt butter in medium saucepan on medium low heat. Stir in flour, then combine milk and cream cheese. Thicken and stir for about 5 min, until consistent throughout. Combine in cheeses, spices, until melted. Pour the sauce over the macaroni, combine in the linguica, stir.
  3. Pour the mac & cheese mixture into a casserole dish (I use a 13x9x2 and it fits perfectly.) Combine bread crumbs, parmesan, spices in small bowl, mixing with fingers. Spread the bread crumb mixture on top of mac & cheese. Bake for 10-15 minutes, then let stand to cool. Enjoy!
  4. If you like it cheesier, you can add more cheese to the sauce mix, or into the combined linguica/sauce/pasta mixture. Experiment with blending it in, or using layers when putting into the baking pan.
  5. I will add pineapple to it for a sweet and spicy flavor. Get 2 canned pineapples, usually crushed, and cook 1 can with linguica, 1 can pureed and blended into the cheese sauce, and fresh pineapple cubes mixed in with the linguica/cheese/pasta mix before baking.
