Ingredients

Instructions

  1. Cut squash into 2 halves and remove seeds. Peel then cut into 1/2 inch chunks.
  2. Peel and core each apple. Cut into 3/4 inch chunks.
  3. In a large 4-quart pan, heat vegetable oil and saute onions.
  4. Stir in squash, apples, broth, water, thyme, salt and pepper. Heat on high till boiling.
  5. Reduce heat to low. Cover and simmer, stirring frequently for 20 to 25 minutes, till squash is tender.
  6. Put half of the mixture into a blender. Cover, with center part removed, and blend a a low speed until very smooth. Pour mixture into bowl and set aside.
  7. Put the other half of the mixture into the blender and blend.
  8. Return both mixtures to the pan, and stir in half and half. Heat thoroughly over medium heat, stirring occasionally.
  9. Serve garnished with parsley if desired.
