Ingredients

1TeaspoonBaking Soda
1 TeaspoonBaking Powder
3TeaspoonsCinnamon
1/2TeaspoonSalt
3Eggs
1CupChocolate ChipsWalnuts, or Dried Cranberries
1CupVegetable Oil
3TeaspoonsVanilla Extract

Instructions

  1. Preheat oven to 325 degrees.
  2. Grate Zucchinis for about 2 Cups.
  3. Sift Flour, Baking Soda, Baking Powder, Cinnamon, Nutmeg and Salt in a bowl.
  4. Beat Eggs, Sugar, Oil and Vanilla in a large bowl.
  5. Add sifted ingredients to the mixture and beat well.
  6. Add Zucchini and mix.
  7. Add in Chocolate Chips, Walnuts or Dried Cranberries, if desired.
  8. Pour into 2 buttered 4 x 8 inch loaf pans.
  9. Bake for about 50 min.
  10. Cool on a rack.
