2Chicken Breasts
1/2CupCarrotsChopped or Shredded
1CupMayonnaiseLow Fat


  1. Trim and chop chicken breasts into 1-inch pieces.
  2. Add chicken to boiling water. Boil till cooked, for about 8-10 minutes.
  3. Add mayonnaise to bowl and mix.
  4. Chop celery, carrots and grapes. Add more or less to taste. Add to large bowl.
  5. Chop apple last (so that it doesn't start to brown). Add to bowl.
  6. Once the chicken is cooled, shred it and add to bowl.
  7. Serve chicken salad on bread or alone.
